😇 Ingredients

For the Cookies:

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 2 ½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp salt

For the Lemon Glaze:

  • 1 cup powdered sugar

  • 2 tbsp fresh lemon juice

For the White Chocolate Drizzle:

  • 1 cup white chocolate chips

  • 1 tbsp vegetable oil


😇 Preparation

1. Make the Dough

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  • In a large bowl, cream the butter and granulated sugar until light and fluffy.

  • Beat in the egg and vanilla extract until smooth.

  • In a separate bowl, whisk together the flour, baking powder, and salt.

  • Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.

2. Shape & Bake

  • Roll dough into 1-inch balls and place on the prepared baking sheet.

  • Flatten each ball slightly with your fingers or the bottom of a glass.

  • Bake for 10–12 minutes, or until the edges are just turning golden.

  • Allow cookies to cool completely on a wire rack.

3. Glaze & Drizzle

  • In a small bowl, whisk together powdered sugar and lemon juice to create a glaze. Add yellow food coloring if desired.

  • Melt the white chocolate chips with vegetable oil in a microwave-safe bowl in 30-second bursts, stirring until smooth.

  • Once cookies are cool, drizzle with white chocolate, followed by the lemon glaze for a gorgeous two-tone finish.
