🧾 Ingredients (Makes 6 Cakes)

½ cup (113g / 3.9 oz) unsalted butter, cut into small pieces

6 oz (170g) bittersweet chocolate, chopped

2 large eggs

2 large egg yolks

¼ cup (50g / 1.7 oz) granulated sugar

⅛ tsp salt

2 tbsp all-purpose flour (sifted)

1. Preheat the Oven
Preheat your oven to 450°F (232°C). Prepare six 4- to 5-ounce ramekins by greasing them well with butter and lightly dusting with flour. Set aside.
2. Melt the Chocolate & Butter

Stovetop method: Fill a medium saucepan with 1½ inches of water and bring to a simmer over medium heat. Place a heatproof bowl on top (make sure it doesn’t touch the water).

Add chopped chocolate and butter to the bowl. Reduce heat to low and stir occasionally until fully melted and smooth.

Microwave option: Microwave chocolate and butter in 30-second intervals, stirring each time, until smooth and melted.
Once melted, remove from heat and let the mixture cool slightly.
3. Prepare the Egg Mixture
In a large bowl, combine:

¼ cup granulated sugar

⅛ tsp salt
Use a hand mixer on low speed to beat the mixture until it becomes thicker and pale yellow—this helps create that rich, custardy texture.
4. Combine Chocolate & Eggs
Slowly pour the slightly cooled chocolate mixture into the beaten eggs, mixing continuously to avoid scrambling the eggs.
5. Add the Flour
Sift in 2 tbsp all-purpose flour and fold gently until just combined. The batter should be smooth and lump-free with no streaks.
6. Bake
Divide the batter evenly among the prepared ramekins.
Bake for 6–8 minutes in the preheated oven. The edges should be set, but the centers will still jiggle slightly—that’s your lava!
⏳ Tip: Don’t bake these ahead of time. Bake just before serving for that perfect molten center.
7. Serve
Let cakes cool in the ramekins for 1 minute.
Carefully invert each onto a dessert plate.
