Instructions
1. Bake the Red Velvet Cake
-
Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
-
In a bowl, sift together flour, cocoa powder, baking soda, and salt.
-
In another bowl, whisk sugar, oil, eggs, buttermilk, vanilla, vinegar, and red food coloring until smooth.
-
Gradually add dry ingredients to the wet mixture and mix until just combined.
-
Divide batter between the pans and bake for 25–30 minutes, or until a toothpick comes out clean.
-
Cool completely, then slice each cake in half horizontally (to make 4 thin layers total).
2. Prepare the Coffee Soak
-
Mix coffee, liqueur (if using), and sugar until dissolved. Set aside to cool.
3. Make the Mascarpone Cream
-
In a chilled bowl, whip heavy cream until soft peaks form.
-
In a separate bowl, beat mascarpone, powdered sugar, and vanilla until smooth.
-
Gently fold the whipped cream into the mascarpone mix until fluffy and combined.
4. Assemble the Cake
-
Place the first layer of red velvet cake on a serving plate.
-
Brush generously with the coffee soak.
-
Spread a layer of mascarpone cream over the soaked cake.
-
Repeat with the remaining layers: cake, soak, cream.
-
Finish with a thick layer of mascarpone on top.
5. Chill & Finish
-
Refrigerate the cake for at least 4 hours (overnight is best) to let the flavors meld.
-
Just before serving, dust the top with cocoa powder and add chocolate shavings if desired.
