Ingredients

For the Red Velvet Cake:

  • 1 ½ cups all-purpose flour

  • 1 cup granulated sugar

  • 1 tbsp cocoa powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 cup buttermilk

  • ½ cup vegetable oil

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 tsp white vinegar

  • 1 tbsp red food coloring

For the Coffee Soak:

  • 1 cup strong brewed espresso or coffee, cooled

  • 2 tbsp coffee liqueur (optional)

  • 1 tbsp sugar

For the Mascarpone Cream Layer:

  • 1 ½ cups mascarpone cheese (room temp)

  • 1 ½ cups heavy whipping cream (cold)

  • ½ cup powdered sugar

  • 1 tsp vanilla extract

For Topping:

  • Unsweetened cocoa powder (for dusting)

  • Dark chocolate shavings or curls (optional)

Instructions

1. Bake the Red Velvet Cake

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.

  2. In a bowl, sift together flour, cocoa powder, baking soda, and salt.

  3. In another bowl, whisk sugar, oil, eggs, buttermilk, vanilla, vinegar, and red food coloring until smooth.

  4. Gradually add dry ingredients to the wet mixture and mix until just combined.

  5. Divide batter between the pans and bake for 25–30 minutes, or until a toothpick comes out clean.

  6. Cool completely, then slice each cake in half horizontally (to make 4 thin layers total).

2. Prepare the Coffee Soak

  • Mix coffee, liqueur (if using), and sugar until dissolved. Set aside to cool.

3. Make the Mascarpone Cream

  1. In a chilled bowl, whip heavy cream until soft peaks form.

  2. In a separate bowl, beat mascarpone, powdered sugar, and vanilla until smooth.

  3. Gently fold the whipped cream into the mascarpone mix until fluffy and combined.

4. Assemble the Cake

  1. Place the first layer of red velvet cake on a serving plate.

  2. Brush generously with the coffee soak.

  3. Spread a layer of mascarpone cream over the soaked cake.

  4. Repeat with the remaining layers: cake, soak, cream.

  5. Finish with a thick layer of mascarpone on top.

5. Chill & Finish

  • Refrigerate the cake for at least 4 hours (overnight is best) to let the flavors meld.

  • Just before serving, dust the top with cocoa powder and add chocolate shavings if desired.
