🍓 Strawberry Cheesecake Shortcake Roll 🍰
Soft sponge cake rolled with creamy cheesecake filling, juicy strawberries, and a buttery shortcake crumble — light, fresh, and totally irresistible.


📋 Ingredients

Cake Roll
• 4 large eggs (room temperature)
• ¾ cup granulated sugar
• 1 tsp vanilla extract
• 1 cup all-purpose flour
• 1 tsp baking powder
• ¼ tsp salt
• ¼ cup milk
• Powdered sugar (for rolling)

Cheesecake Filling
• 8 oz cream cheese, softened
• 1 cup cold heavy cream
• ½ cup powdered sugar
• 1 tsp vanilla extract

Strawberry Layer
• 1½ cups fresh strawberries, diced
• 2 tbsp sugar (optional)

Shortcake Crumble
• 12 vanilla sandwich cookies, crushed
• 2 tbsp melted unsalted butter
• 1 tbsp strawberry gelatin powder


📝 Instructions

1️⃣ Bake the Cake
Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan. Beat eggs and sugar until pale and fluffy. Mix in vanilla. Gently fold in dry ingredients, then stir in milk. Spread evenly and bake 12–14 minutes, just until set.

2️⃣ Roll While Warm
Turn hot cake onto a towel dusted with powdered sugar. Peel parchment and gently roll from the short side. Let cool completely.

3️⃣ Make the Filling
Beat cream cheese until smooth. Add powdered sugar and vanilla. Whip cream to stiff peaks and fold into cream cheese until light and fluffy.

4️⃣ Prepare Strawberries
Toss strawberries with sugar (if using) and rest for 10 minutes.

5️⃣ Crumble Topping
Mix cookie crumbs with butter and gelatin powder. Bake at 350°F for 5 minutes. Cool.

6️⃣ Assemble
Unroll cake carefully. Spread filling, leaving a small border. Sprinkle strawberries. Roll back up snugly, wrap, and chill for at least 1 hour.

7️⃣ Finish & Serve
Frost lightly with extra filling or whipped cream. Top with crumble and fresh strawberries. Slice with a serrated knife.
