📝 Ingredients
• 4 large eggs (warmed in hot water for 5 mins)
• 2 cups (400g) granulated sugar
• 1 tsp vanilla extract
• 2 1/4 cups (270g) all-purpose flour
• 2 1/4 tsp baking powder
• 1/4 tsp salt
• 1 1/4 cups fat-free milk
• 10 tbsp (140g) butter, cubed

1. Preheat & Prep
Preheat oven to 350°F (175°C). Grease two 9-inch round pans or one 10-inch springform pan. Line bottoms with parchment.
2. Warm the Eggs
Place eggs in a bowl of hot tap water for at least 5 minutes to bring them to room temp — essential for fluffiness!
3. Whip the Eggs
Crack warm eggs into a large bowl. Beat on high speed for 5–7 minutes until foamy and doubled in size. Gradually add sugar and continue whipping until thick and pale (another 2–3 minutes). Beat in vanilla.
4. Mix Dry Ingredients
In a separate bowl, sift together flour, baking powder, and salt. Slowly fold into egg mixture on low speed.
5. Heat Milk & Butter
In a small saucepan, heat the butter and milk together until steaming (not boiling). Slowly pour into the batter while mixing on low speed. Mix just until smooth. Scrape the bowl to ensure even blending.
6. Bake
Divide the batter between the prepared pans. Bake for 35–40 minutes, or until golden and springy, and a toothpick comes out clean.
7. Cool
Place cakes on a wire rack. Lightly sprinkle tops with sugar. Let cool in pans for 30 minutes before removing.
