🍰 Eggless Hot Milk Cake (Light, Fluffy & Delicious!)

This eggless cake is so soft and fluffy, you’d never guess there are no eggs involved! Inspired by the classic hot milk cake, this version gets its airy texture and richness from warm milk, melted butter, and creamy yogurt — no eggs needed. It’s simple, comforting, and a perfect canvas for whipped cream, fresh fruit, or just a dusting of powdered sugar.


🧾 Ingredients

  • 2½ cups (330g) all-purpose flour

  • 2½ tsp baking powder

  • ½ tsp salt

  • ¾ cup (185ml) plain yogurt (not Greek), at room temperature

  • 1½ cups (300g) granulated sugar

  • 1½ tbsp vanilla extract

  • ½ tsp baking soda

  • ½ cup (113g) unsalted butter

  • ¼ cup (50ml) vegetable oil (such as canola)

  • 1 cup (240ml) milk


👩‍🍳 Instructions

1️⃣ Preheat & Prepare the Pan

Preheat your oven to 160°C (320°F) with the fan on.
Grease and line an 8-inch round or similar cake pan.


2️⃣ Sift Dry Ingredients

In a large mixing bowl, sift together:

  • Flour

  • Baking powder

  • Salt
    Whisk to combine and set aside.


3️⃣ Mix Yogurt Base

In a separate large bowl, combine:

  • Yogurt

  • Sugar

  • Vanilla

  • Baking soda
    Whisk until smooth and slightly frothy.


4️⃣ Heat Milk Mixture

In a microwave-safe jug or saucepan, combine:

  • Butter

  • Oil

  • Milk

Heat until the butter melts and the mixture is hot to the touch.


5️⃣ Combine Wet & Dry

  • Add half of the hot milk mixture to the yogurt mixture and whisk to combine.

  • Add half of the dry ingredients and mix gently.

  • Add the remaining hot milk mixture, mix again.

  • Finish with the rest of the dry ingredients, mixing just until combined (do not overmix).

🔍 The batter should be smooth with no lumps.


6️⃣ Bake

Pour the batter into your prepared pan.
Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then release and cool completely on a wire rack.
