☀️ Ingredients
For the Cake:
-
½ cup unsalted butter, softened
-
1 cup granulated sugar
-
3 large eggs
-
1 teaspoon vanilla extract
-
1½ cups all-purpose flour
-
1 teaspoon baking powder
-
¼ teaspoon salt
-
½ cup whole milk
-
1 cup crushed pineapple, drained
-
½ cup pineapple juice
For the Glaze & Topping:
-
½ cup sweetened condensed milk
-
1–2 tablespoons pineapple juice (to loosen the glaze)
-
½ cup pineapple chunks (for garnish)
🌴 Instructions
-
Preheat & Prep:
Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan. -
Cream Butter & Sugar:
In a large mixing bowl, beat the softened butter and sugar together until light and fluffy. -
Add Eggs & Vanilla:
Add the eggs one at a time, mixing well after each. Stir in the vanilla extract. -
Mix Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, and salt. -
Combine:
Alternate adding the dry ingredients and milk to the creamed mixture, starting and ending with flour. Mix until just combined. -
Add Pineapple:
Fold in the drained crushed pineapple and pineapple juice until evenly distributed. -
Bake:
Pour the batter into the prepared cake pan. Smooth the top and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. -
Glaze the Cake:
While the cake is baking, whisk the sweetened condensed milk with 1–2 tablespoons pineapple juice until smooth. -
Soak & Cool:
Let the cake cool in the pan for 10 minutes. Poke holes across the top with a fork or skewer and pour the glaze slowly over the warm cake. Allow it to fully absorb and cool. -
Finish & Serve:
Once completely cooled, top with pineapple chunks and a little extra glaze or whipped cream if desired. Slice and enjoy!
🍰 Recipe Notes & Tips
-
Don’t skip poking holes—this lets the glaze soak in and keeps the cake incredibly moist.
-
For extra flair, top with toasted coconut, maraschino cherries, or mint leaves.
-
This cake also works well as cupcakes or in a loaf pan—just adjust bake time accordingly.
