This Tropical Pineapple Bliss Cake is a soft and tender butter cake infused with crushed pineapple and topped with a sweet pineapple glaze. It’s moist, flavorful, and perfect for summer parties, beach-themed birthdays, or anytime you crave a little tropical escape.


☀️ Ingredients

For the Cake:

  • ½ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 teaspoon vanilla extract

  • 1½ cups all-purpose flour

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • ½ cup whole milk

  • 1 cup crushed pineapple, drained

  • ½ cup pineapple juice

For the Glaze & Topping:

  • ½ cup sweetened condensed milk

  • 1–2 tablespoons pineapple juice (to loosen the glaze)

  • ½ cup pineapple chunks (for garnish)


🌴 Instructions

  1. Preheat & Prep:
    Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

  2. Cream Butter & Sugar:
    In a large mixing bowl, beat the softened butter and sugar together until light and fluffy.

  3. Add Eggs & Vanilla:
    Add the eggs one at a time, mixing well after each. Stir in the vanilla extract.

  4. Mix Dry Ingredients:
    In a separate bowl, whisk together the flour, baking powder, and salt.

  5. Combine:
    Alternate adding the dry ingredients and milk to the creamed mixture, starting and ending with flour. Mix until just combined.

  6. Add Pineapple:
    Fold in the drained crushed pineapple and pineapple juice until evenly distributed.

  7. Bake:
    Pour the batter into the prepared cake pan. Smooth the top and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

  8. Glaze the Cake:
    While the cake is baking, whisk the sweetened condensed milk with 1–2 tablespoons pineapple juice until smooth.

  9. Soak & Cool:
    Let the cake cool in the pan for 10 minutes. Poke holes across the top with a fork or skewer and pour the glaze slowly over the warm cake. Allow it to fully absorb and cool.

  10. Finish & Serve:
    Once completely cooled, top with pineapple chunks and a little extra glaze or whipped cream if desired. Slice and enjoy!
