Ingredients:
- 2 zucchini
- Salt
- 2 potatoes
- 1 onion
- 1 carrot
- A sprig of parsley
- 2 eggs
- Black pepper
- 3 tablespoons breadcrumbs
- Mozzarella cheese
- Olive oil
Directions:
Grate the zucchini and sprinkle with a little salt. Let them sit for about 10 minutes to absorb the moisture, then squeeze out the excess liquid with a clean towel or cheesecloth.
Peel and grate the potatoes and carrots, then finely chop the onion and parsley.
In a large bowl, mix the grated zucchini, potatoes, carrots, onions and chopped parsley.
Break the eggs, add black pepper and mix well.
Stir in the breadcrumbs and small cubes or slices of mozzarella until the mixture comes together.
Heat the olive oil in a pan over medium heat. Scoop out portions of the mixture and shape into patties or patties.
Cook each patty for 3-4 minutes on each side or until golden brown and crispy.
Place on a paper towel lined plate to remove excess oil.
Serve hot with your favorite dipping sauce or a fresh salad.
