🧁 Chocolate Cake (2 Layers)
Ingredients:
- 2 ½ cups (312g) all-purpose flour
- ¾ cup (75g) unsweetened cocoa powder
- 2 tsp (8g) baking powder
- 1 ½ tsp (7g) baking soda
- ½ tsp (2.5g) salt
- 2 ¼ cups (450g) granulated sugar
- 1 cup (225g) unsalted butter, softened
- 4 large eggs
- 1 ½ cups (360ml) buttermilk
- 1 cup (240ml) warm water
- 2 tsp (10ml) vanilla extract
🍯 Caramel Pecan Frosting
Ingredients:
- ½ cup (115g) unsalted butter
- 1 cup (200g) brown sugar
- ¼ cup (60ml) heavy cream
- 2 cups (250g) powdered sugar
- 1 tsp (5ml) vanilla extract
- ¾ cup (75g) chopped pecans
👩🍳 Instructions
1. Prep the Oven
Preheat to 175°C (350°F). Grease and line two 8-inch (20cm) round cake pans.
2. Make the Cake Batter
- Sift together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla.
- Alternate adding dry ingredients and buttermilk (start and end with dry).
- Gradually stir in warm water until smooth.
3. Bake
- Divide batter evenly into pans.
- Bake for 30–35 minutes, or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
4. Prepare the Frosting
- Melt butter and brown sugar over medium heat.
- Stir in cream and let it gently boil for 2 minutes.
- Remove from heat and cool slightly.
- Beat in powdered sugar, vanilla, and pecans until smooth.
5. Assemble the Cake
- Place one layer on a serving plate and spread frosting generously.
- Add the second layer and frost the top and sides.
