🍞 Homemade Poppy Seed Roll – Soft and Full of Flavour
A delightful, soft pastry filled with rich poppy seeds – perfect for breakfast, dessert, or a special treat.
Ingredients
For the Dough:

7 g dry yeast (or 30 g fresh yeast)

250 ml warm milk

140 g sugar
-
2 egg yolks
-
8 g vanilla sugar
-
550 g all-purpose flour
-
120 ml vegetable oil
-
½ tsp salt
-
Zest of 1 lemon
-
Baking paper
For the Filling:
-
280 ml hot milk
-
250 g sugar
-
120 g butter
-
450 g finely ground poppy seeds
-
8 g vanilla sugar
-
2 tbsp rum
-
3 egg whites
-
Pinch of salt
For the Coating:
-
1 egg yolk
-
1 tbsp milk
Instructions
1. Prepare the Dough:

Dissolve yeast in warm milk with a pinch of sugar and let it activate for 5–10 minutes.

In a large bowl, combine sugar, egg yolks, vanilla sugar, lemon zest, and salt.

Gradually add flour and the yeast mixture, then stir in the vegetable oil.

Knead the dough until smooth and elastic.

Cover and let it rise in a warm place for 1–1.5 hours, until doubled in size.
2. Make the Filling:

Heat the milk with sugar and butter until melted.

Add the ground poppy seeds and stir well.

Remove from heat, then mix in vanilla sugar, rum, and a pinch of salt.

Whip egg whites to stiff peaks and gently fold into the poppy seed mixture.
3. Assemble the Roll:

Roll out the dough on a baking paper-lined surface into a rectangle.

Spread the poppy seed filling evenly over the dough.

Carefully roll the dough into a tight log and place it on a baking tray.

Brush the top with egg yolk mixed with milk for a golden glaze.
4. Bake:

Preheat the oven to 180°C (350°F).

Bake for 40–45 minutes, until golden brown.

Let it cool slightly before slicing.
Tips for Perfection:

For extra softness, cover the roll with a clean kitchen towel while it cools.

You can sprinkle a little powdered sugar on top before serving for a beautiful finish.
