🍋 Lemon Pound Cake Inspired by Afro Man’s Trial! 🍰
Ever since I watched Afro Man’s trial about his iconic song Lemon Pound Cake, I couldn’t resist the urge to bake one myself! 😄 Here’s my take on this deliciously zesty cake that’s sure to brighten up your day!
Ingredients:
- For the Cake:
- 1 cup salted butter (2 sticks), softened
- 2 cups granulated sugar
- 4 large eggs (room temperature)
- 1 tsp vanilla extract
- Zest of 2 lemons 🍋
- 3 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup sour cream
- 1/2 cup buttermilk
- For the Glaze:
- 2 cups powdered sugar
- 1/4 cup fresh lemon juice 🍋
How to Make It:
- Mix the Wet Ingredients:
In a large mixing bowl, beat together softened butter and granulated sugar until creamy and well combined. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest. - Prepare the Dry Ingredients:
In a separate bowl, whisk together flour, baking soda, and salt. Set aside. - Combine Wet & Dry Ingredients:
In another bowl, mix the buttermilk and sour cream. Gradually add this mixture and the dry ingredients into the butter/sugar mixture, alternating between them until everything is fully combined. - Bake the Cake:
Pour the batter into a parchment-lined and greased 9×5 loaf pan. Bake at 325°F (163°C) for 80-90 minutes, or until a toothpick inserted in the center comes out clean. - Glaze & Serve:
While the cake cools, mix powdered sugar and lemon juice in a small bowl. Once the cake has cooled slightly, pour the glaze over the top. Let it soak in before serving.
