🧾 Ingredients
🍪 Base
- 25 Oreo cookies
- ¼ cup (55g) butter, melted
🍫 Cheesecake Filling
- 250g (9 oz) dark chocolate (45–60% cocoa recommended)
- 400ml (1⅔ cup) heavy cream
- 250g (9 oz) cream cheese (room temperature)
- ½ cup powdered (icing) sugar
🍮 Chocolate Ganache Topping
- 250g (9 oz) dark chocolate
- 250ml (1 cup) cream
👩🍳 Instructions
1️⃣ Prepare the Base
- Crush the Oreo cookies into fine crumbs (use a food processor or crush in a bag with a rolling pin).
- Mix with melted butter until it resembles wet sand.
- Press firmly into an 8-inch (20cm) lined cake tin.
- Chill in the fridge while you prepare the filling.
2️⃣ Melt the Chocolate
- Chop the dark chocolate into small pieces.
- Melt gently over a bowl of simmering water (double boiler method).
- Stir until smooth, then set aside to cool slightly.
3️⃣ Whip the Cream
- Whisk the heavy cream until it reaches a softly whipped stage.
- Set aside.
4️⃣ Make the Filling
- In a bowl, beat cream cheese and powdered sugar until smooth and creamy.
- Add the cooled melted chocolate and mix well.
- Fold in the whipped cream gently until smooth, fluffy, and velvety.
5️⃣ Assemble
- Pour the filling over the chilled base.
- Smooth the top with a spatula.
- Tap the pan lightly to remove air bubbles.
- Chill in the fridge.
6️⃣ Make the Ganache
- Heat the cream until just about to boil.
- Pour over chopped chocolate and let sit for 5 minutes.
- Stir until smooth and glossy.
7️⃣ Final Chill
- Pour ganache over the cheesecake.
- Refrigerate for 4–6 hours or overnight until fully set.
