Cake Roll

  • 4 large eggs, room temperature

  • ¾ cup (150 g) granulated sugar

  • 1 tsp vanilla extract

  • 1 cup (125 g) all-purpose flour

  • 1 tsp baking powder

  • ¼ tsp salt

  • ¼ cup (60 ml) milk

  • Powdered sugar (for dusting towel)

Cheesecake Filling

  • 8 oz (225 g) cream cheese, softened

  • 1 cup (240 ml) cold heavy cream

  • ½ cup (60 g) powdered sugar

  • 1 tsp vanilla extract

Strawberry Layer

  • 1½ cups fresh strawberries, diced

  • 2 tbsp sugar (optional)

Shortcake Crumble

  • 12 vanilla sandwich cookies (Golden Oreos work best)

  • 2 tbsp unsalted butter, melted

  • 1 tbsp strawberry gelatin powder


🍰 Instructions

1️⃣ Bake the Cake Roll

Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.

Whip eggs and sugar for 3–4 minutes until pale, thick, and fluffy. Mix in vanilla.
Gently fold in sifted flour, baking powder, and salt. Stir in milk just until combined.

Spread batter evenly in the pan and bake 12–14 minutes, until lightly springy.

Immediately turn cake onto a powdered-sugar-dusted towel, peel parchment, and roll up (short side). Let cool completely.


2️⃣ Cheesecake Filling

Beat cream cheese until smooth. Add powdered sugar and vanilla.
Whip heavy cream to stiff peaks and gently fold into cream cheese mixture until fluffy.


3️⃣ Strawberry Prep (Optional)

Toss diced strawberries with sugar and rest for 10 minutes to release juices.


4️⃣ Shortcake Crumble

Mix crushed cookies with melted butter and strawberry gelatin powder.
Bake at 350°F (175°C) for 5 minutes, then cool.

Carefully unroll cooled cake.
Spread cheesecake filling evenly, leaving a 1-inch border.
Add strawberries, then gently roll back up (no towel).

Wrap tightly and chill for at least 1 hour.
