🍋 Lemon Loaf Recipe 🍋

Soft, moist, and bursting with fresh lemon flavor—perfect for tea time or dessert!


🧾 Ingredients

For the loaf:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 cup (120ml) milk
  • 1/3 cup (80ml) vegetable oil
  • 2 tbsp lemon zest (from 1–2 lemons)
  • 1/4 cup (60ml) lemon juice
  • 1 tsp vanilla extract

For the glaze:

  • 1/2 cup (60g) powdered sugar
  • 2–3 tsp lemon juice

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F). Grease a 9×5-inch loaf pan and line with parchment paper.
  2. Mix dry ingredients:
    In a large bowl, combine flour, sugar, baking powder, and salt.
  3. Mix wet ingredients:
    In another bowl, whisk eggs, milk, oil, lemon zest, lemon juice, and vanilla until smooth.
  4. Combine:
    Add wet ingredients to dry and gently fold until just combined. (Avoid overmixing for a soft texture.)
  5. Bake:
    Pour batter into the pan and smooth the top. Bake for 45–50 minutes, or until a toothpick comes out clean.
  6. Cool:
    Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack.
  7. Glaze:
    Mix powdered sugar and lemon juice, then drizzle over the warm loaf. Let it set before slicing.

Tip: For extra lemon flavor, add a little zest to the glaze too!
