Boiled Fruit Cake Recipe
A classic boiled fruit cake that is rich, moist, and packed with delicious dried fruits. This easy recipe is perfect for tea time, festive gatherings, or as a homemade dessert.
Ingredients
- 2 cups mixed dried fruits (raisins, currants, sultanas, and chopped dates)
- 1 cup water
- 1 cup brown sugar (or regular sugar)
- 150g butter or margarine
- 1 teaspoon baking soda
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon mixed spice (or a combination of cinnamon and nutmeg)
- ½ teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
Step 1: Prepare the Fruit Mixture
In a medium saucepan, combine the dried fruits, water, sugar, and butter. Bring the mixture to a gentle boil, then reduce the heat and simmer for 5–10 minutes, stirring occasionally.
Step 2: Add the Baking Soda
Remove the saucepan from the heat and stir in the baking soda. The mixture will foam slightly, which is completely normal. Allow it to cool for 10–15 minutes.
Step 3: Mix the Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, mixed spice, and salt until well combined.
Step 4: Add Eggs and Vanilla
Once the fruit mixture has cooled to a warm temperature (not hot), beat in the eggs and vanilla extract until fully incorporated.
Step 5: Combine the Batter
Gradually add the dry ingredients to the fruit mixture and stir until a smooth batter forms. Avoid overmixing.
Step 6: Bake the Cake
Pour the batter into a greased or lined baking pan and spread it evenly.
Bake in a preheated oven at 160–170°C (320–340°F) for 45–60 minutes, or until a toothpick inserted into the center comes out clean.
