📝 Ingredients
🍪 For the cookies:
• 200g all-purpose flour
• 50g custard powder (like Bird’s)
• 100g unsalted butter, softened
• 80g powdered sugar
• 1 tsp vanilla extract
• 2–3 tbsp milk
🧁 For the filling:
• 100g unsalted butter, softened
• 150g powdered sugar
• 1–2 tbsp custard powder
• 1 tsp vanilla extract
👩🍳 Instructions
1️⃣ Make the dough
Cream butter and sugar until light & fluffy.
Mix in vanilla.
Sift in flour + custard powder, then combine into a soft dough.
Add milk gradually if needed.
2️⃣ Shape the cookies
Roll dough to ~5mm thickness.
Cut into shapes (classic ovals or simple circles).
Place on a lined baking tray.
3️⃣ Bake
Preheat oven to 170°C (340°F).
Bake for 12–15 minutes until pale with lightly golden edges.
Cool completely.
4️⃣ Prepare the filling
Beat butter until creamy.
Add sugar, custard powder & vanilla.
Whip until smooth and fluffy.
5️⃣ Assemble
Spread or pipe filling onto one cookie.
Top with another and gently press.
