🥕🍰 EASY CARROT CAKE ROLL

📝 Ingredients

🎂 For the Carrot Cake:

🥕 3 large eggs
🍬 ¾ cup granulated sugar
🌾 ¾ cup all-purpose flour
🥕 1½ cups finely grated carrots
🌿 1 tsp cinnamon
🧁 ½ tsp baking powder
🧂 ¼ tsp salt
🍦 1 tsp vanilla extract

🤍 For the Cream Cheese Filling:

🧀 8 oz cream cheese (softened)
🧈 2 tbsp butter (softened)
🍚 1 cup powdered sugar
🍦 1 tsp vanilla extract


👩‍🍳 Instructions

1️⃣ Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.

2️⃣ Whip eggs and sugar until thick, pale, and fluffy.

3️⃣ Mix in vanilla. Gently fold in flour, cinnamon, baking powder, and salt.

4️⃣ Fold in finely grated carrots.

5️⃣ Spread batter evenly in prepared pan. Bake for 10–12 minutes.

6️⃣ Roll while warm: Turn cake onto a clean towel dusted with powdered sugar. Peel off parchment and roll tightly from the short end.

7️⃣ Cool completely while rolled.

8️⃣ Prepare filling: Beat cream cheese, butter, powdered sugar, and vanilla until smooth and creamy.

9️⃣ Fill & roll: Carefully unroll cake, spread filling evenly, then roll back up tightly.
