Ingredients
For the Funfetti Cake
- 3 cups (375 g) all-purpose flour
- 2½ cups (500 g) sugar
- 1 tbsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- 1½ cups (340 g) unsalted butter, softened
- 6 large egg whites
(or 3 whole eggs + 3 egg whites) - 1½ cups (360 ml) milk, room temperature
- ½ cup (120 ml) vegetable oil
- 2 tbsp vanilla extract
- ⅔ cup (120 g) rainbow sprinkles (jimmies type, not nonpareils)
Whipped Vanilla Buttercream
- 2 cups (452 g) unsalted butter, softened
- 6 cups (720 g) powdered sugar
- 6 tbsp (90 ml) milk or heavy cream
- 2 tsp vanilla extract
- A pinch of salt
Instructions
Make the Funfetti Cake
- Preheat the oven to 170°C (340°F).
- Grease and line six 6-inch cake pans with parchment paper circles.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Add softened butter and mix until the texture resembles soft crumbs.
- In another bowl, combine milk, vegetable oil, egg whites, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and beat until smooth and creamy.
- Gently fold in the rainbow sprinkles to avoid color bleeding.
- Divide the batter evenly among the prepared cake pans.
- Bake for 18–22 minutes or until the cakes spring back lightly when touched.
- Let the cake layers cool completely before assembling.
Make the Whipped Vanilla Buttercream
- Beat the softened butter until pale, fluffy, and creamy.
- Gradually add powdered sugar while mixing continuously.
- Pour in milk or heavy cream and vanilla extract.
- Whip until the buttercream becomes light, smooth, and airy.
- Add a pinch of salt to balance the sweetness.
Assemble the 6 Layers
- Level the tops of the cake layers if needed.
- Place the first cake layer onto a cake board or stand.
- Spread a thin layer of buttercream evenly over the top.
