🍋 Lemon Loaf Recipe 🍋
Soft, moist, and bursting with fresh lemon flavor—perfect for tea time or dessert!
🧾 Ingredients
For the loaf:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 1/2 cup (120ml) milk
- 1/3 cup (80ml) vegetable oil
- 2 tbsp lemon zest (from 1–2 lemons)
- 1/4 cup (60ml) lemon juice
- 1 tsp vanilla extract
For the glaze:
- 1/2 cup (60g) powdered sugar
- 2–3 tsp lemon juice

- Preheat oven to 180°C (350°F). Grease a 9×5-inch loaf pan and line with parchment paper.
- Mix dry ingredients:
In a large bowl, combine flour, sugar, baking powder, and salt. - Mix wet ingredients:
In another bowl, whisk eggs, milk, oil, lemon zest, lemon juice, and vanilla until smooth. - Combine:
Add wet ingredients to dry and gently fold until just combined. (Avoid overmixing for a soft texture.) - Bake:
Pour batter into the pan and smooth the top. Bake for 45–50 minutes, or until a toothpick comes out clean. - Cool:
Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack. - Glaze:
Mix powdered sugar and lemon juice, then drizzle over the warm loaf. Let it set before slicing.
