3–4 ripe bananas, peeled and mashed

Preheat your oven to 400°F (200°C).
Line a 9-inch cake tin or loaf pan with parchment paper.
2️⃣ Melt & Combine
In a saucepan over medium heat, melt the butter.
Add the sugar and stir until fully dissolved.
Stir in the mashed bananas and chopped dates.
3️⃣ Add the Flour
Reduce heat to low and mix in the flour.
Stir until fully incorporated, then remove from heat.
Let the mixture cool slightly (it should be warm, not hot).
4️⃣ Add Egg Yolks
Stir in the egg yolks once the mixture has cooled enough.
5️⃣ Whip Egg Whites
In a separate bowl, whisk egg whites until soft peaks form.
