Ingredients:
For the Cake:
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 package (8 ounces) cream cheese, softened
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1 can (20 ounces) crushed pineapple, well drained
For the Glaze:
1 1/2 cups powdered sugar
2–3 tablespoons pineapple juice or milk
1/2 teaspoon vanilla extract
Directions:
Preheat Oven: Preheat your oven to 175°C (350°F). Grease and flour a bundt pan.
Cream Butter, Cream Cheese & Sugar: In a large bowl, beat butter, cream cheese, and sugar together until smooth, light, and fluffy.
Add Eggs: Add eggs one at a time, mixing well after each addition.
Mix Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt.
Combine Batter: Gradually add dry ingredients to the wet mixture. Mix until just combined.
Add Flavor & Pineapple: Stir in vanilla extract and gently fold in the drained crushed pineapple.
Bake: Pour batter into prepared bundt pan and bake for 60–70 minutes, or until a toothpick inserted comes out clean.
Cool: Let cake cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Prepare Glaze: Mix powdered sugar, pineapple juice (or milk), and vanilla until smooth.
Glaze & Serve: Drizzle glaze over the cooled cake and serve.
