🥕 Classic Carrot Cake 🥕

Soft, moist, and warmly spiced — this carrot cake is perfectly balanced with a rich cream cheese frosting. A timeless favorite for any occasion!


🧾 Ingredients

For the Cake

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1½ tsp cinnamon
  • ½ tsp salt
  • ¾ cup vegetable oil
  • 1 cup sugar
  • ½ cup brown sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 2 cups finely grated carrots
  • ½ cup crushed pineapple (optional – adds extra moisture)
  • ½ cup chopped walnuts or pecans (optional)

For the Cream Cheese Frosting

  • 8 oz (225 g) cream cheese, softened
  • ½ cup butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 1–2 tbsp milk (if needed)

👩‍🍳 Instructions

1. Prepare the Oven
Preheat oven to 350°F (175°C).
Grease two 8-inch round cake pans and line with parchment paper.

2. Mix Dry Ingredients
In a bowl, whisk together:

  • flour
  • baking powder
  • baking soda
  • cinnamon
  • salt

3. Mix Wet Ingredients
In another bowl, beat:

  • oil
  • sugar
  • brown sugar
  • eggs
  • vanilla

Mix until smooth and well combined.

4. Combine
Gradually add the dry ingredients into the wet mixture, mixing gently.

5. Add Carrots & Extras
Fold in:

  • grated carrots
  • pineapple (if using)
  • nuts (if using)

6. Bake
Divide batter evenly between pans.
Bake for 30–35 minutes, or until a toothpick inserted comes out clean.

7. Cool
Let cakes cool completely before frosting.
