🥕✨ MOIST LAYERED CARROT CAKE ✨🥕

📝 Ingredients

Dry Ingredients
• 2½ cups all-purpose flour
• 2 cups brown sugar
• 1 tsp baking powder
• 1½ tsp baking soda
• 1 tsp salt
• 2 tsp cinnamon
• ½ tsp nutmeg (optional)

Wet Ingredients
• 1½ cups vegetable oil
• 4 large eggs
• 2 tsp vanilla extract

Add-ins
• 3 cups finely grated carrots
• ¾ cup chopped pecans or walnuts
• ½ cup raisins (optional)


👩‍🍳 Instructions

1. Prep
• Preheat oven to 180°C / 350°F
• Grease & line three 8-inch cake pans

2. Mix Dry Ingredients
• Whisk flour, baking powder, baking soda, salt, cinnamon & nutmeg

3. Mix Wet Ingredients
• Whisk oil, brown sugar, eggs & vanilla until smooth and glossy

4. Combine
• Add dry ingredients into wet mixture
• Mix gently until just combined (don’t overmix!)

5. Add Texture 🥕
• Fold in grated carrots, nuts & raisins
• Batter will be thick and rich

6. Bake
• Divide evenly into pans
• Bake 30–35 minutes
• Done when a toothpick comes out clean

7. Cool
• Let cakes cool completely before frosting
