📝 INGREDIENTS
🌿 Dry & Spices
• 1½ cups (190g) all-purpose flour
• 1 tsp (4g) baking powder
• 1 tsp (3g) ground cinnamon
• ½ tsp (2g) ground nutmeg
• ¼ tsp (1g) ground cloves
• ¼ tsp (1g) salt
🍊 Fruits (soaked 30 min or overnight)
• 2½ cups (400g) mixed dried fruits (raisins, sultanas, currants, cherries, mixed peel)
• ½ cup (120ml) orange or apple juice
(or rum/brandy for a richer flavor)
🧈 Wet Ingredients
• ¾ cup (170g) unsalted butter, softened
• ¾ cup (150g) brown sugar
• 3 large eggs
• 1½ tsp (7ml) vanilla extract
• 1 tbsp molasses or dark honey (optional, for deeper color & flavor)

• ½ cup (60g) chopped walnuts or almonds
👩🍳 INSTRUCTIONS
1️⃣ Preheat oven to 150°C. Line and lightly grease your baking pan.
2️⃣ In a bowl, whisk together flour, baking powder, spices, and salt. Set aside.
3️⃣ Drain soaked fruits (reserve 2–3 tbsp of the liquid).
4️⃣ Cream butter and brown sugar until light and fluffy.
5️⃣ Add eggs one at a time, mixing well. Stir in vanilla and molasses.
6️⃣ Gently fold in dry ingredients, then add fruits, nuts, and reserved liquid. Mix until thick and well combined.
7️⃣ Transfer batter to pan, smooth the top, and tap lightly to remove air bubbles.
8️⃣ Bake slowly until firm in the center and a skewer comes out clean.
9️⃣ Cool completely in the pan, then wrap tightly in foil.
