🎂 Moist Funfetti Cake 🌈

🧾 Ingredients (Cake)
• 2½ cups (312g) all-purpose flour
• 2½ tsp baking powder
• ½ tsp salt
• 1 cup (227g) unsalted butter, softened
• 1½ cups (300g) granulated sugar
• 4 large eggs
• 2 tsp pure vanilla extract
• 1 cup (240ml) whole milk
• ½ cup (120g) sour cream or plain yogurt
• ½ cup (80g) rainbow sprinkles (jimmies)
👩🍳 Instructions (Cake)
- Preheat oven to 175°C (350°F) and grease two 8-inch round pans.
- Whisk together flour, baking powder, and salt.
- In a large bowl, beat butter and sugar until light & fluffy.
- Add eggs one at a time, then mix in vanilla. Stir in sour cream.
- Alternately add dry ingredients and milk, starting & ending with flour.
- Gently fold in sprinkles.
- Divide batter evenly between pans.
- Bake for 25–30 minutes or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to a wire rack.
🧁 Vanilla Buttercream Frosting
🧾 Ingredients
• 1 cup (227g) unsalted butter, softened
• 4 cups (500g) powdered sugar
• 3–4 tbsp milk or cream
• 2 tsp pure vanilla extract
• Pinch of salt

👩🍳 Instructions (Frosting)
- Beat butter until smooth and creamy.
- Gradually add powdered sugar on low speed.
- Add milk (1 tbsp at a time) until desired consistency.
- Mix in vanilla and salt.
- Beat until light, fluffy, and smooth.
🎉 Assembly
• Place one cake layer on a plate and spread frosting on top.
• Add the second layer and frost the top and sides.
