🧾 Ingredients
🍂 Pumpkin Muffin Batter
- 1½ cups all-purpose flour
- ¾ cup sugar
- ½ cup brown sugar
- 1 cup pumpkin puree
- ½ cup vegetable oil
- 2 eggs
- ¼ cup milk
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp ginger
- ¼ tsp salt
🧀 Cream Cheese Filling
- 200 g (8 oz) cream cheese, softened
- ¼ cup sugar
- 1 tsp vanilla extract

- Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
Make the filling:
2. In a bowl, mix cream cheese, sugar, and vanilla until smooth. Set aside.
Prepare the batter:
3. In a large bowl, whisk together pumpkin puree, oil, eggs, milk, sugar, brown sugar, and vanilla.
4. In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
5. Add dry ingredients into the pumpkin mixture and mix until smooth.
Assemble:
6. Fill each muffin cup halfway with pumpkin batter.
7. Add a spoonful of cream cheese filling in the center.
8. Cover with more pumpkin batter.
Bake:
9. Bake for 18–22 minutes until tops are set and a toothpick inserted in the muffin part comes out clean.
10. Cool for about 10 minutes before serving.
