🍒 Cherry Fruit Loaf Cake

🧾 Ingredients

🍰 For the Cake

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup sugar
  • ½ cup butter, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • ¾ cup milk or buttermilk
  • 1 cup glacé or maraschino cherries, chopped 🍒
  • ½ cup yellow candied fruit or peaches/apricots, chopped
  • ½ cup raisins or currants (optional)
  • ½ cup chopped pecans or walnuts (optional)

🍯 For the Glaze

  • 1 cup powdered sugar
  • 2–3 tbsp milk or lemon juice
  • ½ tsp vanilla

👩‍🍳 Instructions

  1. Preheat oven to 175°C (350°F) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  5. Add dry ingredients and milk alternately, mixing gently.
  6. Toss cherries and fruits with 1 tbsp flour (this keeps them from sinking).
  7. Fold fruits and nuts into the batter carefully.
  8. Pour batter into the loaf pan and smooth the top.
  9. Bake for 45–55 minutes, or until a skewer comes out clean.
  10. Let the cake cool completely before glazing.

Glaze It
Mix powdered sugar, milk (or lemon juice), and vanilla until smooth. Drizzle over the cooled cake.


💡 Tip: Lightly pat cherries dry before using to avoid excess moisture in the cake!
