π° For the Cake
- 2 cups all-purpose flour
- 1 tsp baking powder
- Β½ tsp baking soda
- Β½ tsp salt
- ΒΎ cup sugar
- Β½ cup butter, softened
- 2 eggs
- 1 tsp vanilla extract
- ΒΎ cup milk or buttermilk
- 1 cup glacΓ© or maraschino cherries, chopped π
- Β½ cup yellow candied fruit or peaches/apricots, chopped
- Β½ cup raisins or currants (optional)
- Β½ cup chopped pecans or walnuts (optional)
π― For the Glaze
- 1 cup powdered sugar
- 2β3 tbsp milk or lemon juice
- Β½ tsp vanilla

- Preheat oven to 175Β°C (350Β°F) and grease a loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- Add dry ingredients and milk alternately, mixing gently.
- Toss cherries and fruits with 1 tbsp flour (this keeps them from sinking).
- Fold fruits and nuts into the batter carefully.
- Pour batter into the loaf pan and smooth the top.
- Bake for 45β55 minutes, or until a skewer comes out clean.
- Let the cake cool completely before glazing.
β¨ Glaze It
Mix powdered sugar, milk (or lemon juice), and vanilla until smooth. Drizzle over the cooled cake.
