These homemade Almond Raisin Muffins are soft, fluffy, and packed with crunchy almonds and juicy raisins 😍

✨ Ingredients
- 1½ cups (190g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup (115g) unsalted butter, softened (or vegetable oil)
- ¾ cup (150g) sugar
- 2 large eggs
- ½ cup (120ml) milk or yogurt
- 1 tsp vanilla extract
- ½ cup (60g) chopped almonds
- ½ cup (80g) raisins (soaked in warm water for 10 minutes, then drained)
👩🍳 Instructions
1️⃣ Preheat oven to 180°C (350°F) and line a 12-cup muffin tray with paper liners.
2️⃣ In a bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
3️⃣ In another bowl, cream butter and sugar until light and fluffy.
4️⃣ Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
5️⃣ Add the dry ingredients alternately with milk (or yogurt), mixing gently until just combined.
6️⃣ Fold in the chopped almonds and soaked raisins.
7️⃣ Spoon the batter into muffin cups, filling each about ⅔ full.
8️⃣ Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
9️⃣ Let cool slightly before serving and enjoy warm! ✨
