For the Cake
- 3 eggs
- A pinch of salt
- 1 cup sugar
- A little vanilla extract
- 1 cup vegetable oil
- 1 cup milk
- Zest of 1 orange
- Juice of 1 orange
- 2½ cups all-purpose flour
- 10 g baking powder
- 2 tbsp shredded coconut
For the Orange Syrup
- 4–5 tbsp orange juice
- 4 tbsp icing sugar
How to Make the Cake
Step 1: Prepare the Batter
- Preheat your oven to 180°C (350°F).
- In a large bowl, whisk the eggs with sugar and a pinch of salt until smooth and slightly fluffy.
- Add vanilla extract, vegetable oil, milk, orange zest, and orange juice. Mix well.
- Add flour and baking powder. Stir until the batter becomes smooth and lump-free.
- Fold in the shredded coconut.
Step 2: Bake
- Pour the batter into a greased baking pan.
- Bake for 35–40 minutes or until golden brown.

- In a small bowl, mix orange juice and icing sugar until smooth.
