  • 1 tbsp lemon juice
  • 2 tbsp water

For the Whipped Cream Frosting

  • 2 cups whipping cream (480 ml), chilled
  • ½ cup powdered sugar (60 g)
  • 1 tsp vanilla
  • 2 tbsp strawberry powder or puree (optional)

Instructions

Make the Cake

  • Preheat the oven to 170°C and grease or line three 8-inch cake pans.
  • Cream the softened butter and sugar together until pale, light, and fluffy.
  • Add the eggs gradually, mixing well after each addition.
  • Blend in the vegetable oil, vanilla, and strawberry puree until fully combined.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Add the dry ingredients to the wet mixture in batches, alternating with milk, mixing until smooth.
  • Add food colour if desired for a richer strawberry appearance.
  • Divide the batter evenly between the prepared pans.
  • Bake until the cakes spring back lightly when touched and a skewer inserted in the center comes out clean.
  • Allow the cakes to cool completely before assembling.

Prepare the Strawberry Filling

  • Add diced strawberries, sugar, lemon juice, water, and cornstarch to a saucepan.
  • Cook over low heat while stirring until thick and jam-like.
  • Remove from heat and let it cool completely.

Make the Whipped Cream Frosting

  • In a chilled bowl, whip the cream, powdered sugar, and vanilla until thick and stable peaks form.
  • Add strawberry powder or puree if desired for extra flavor and color.

Assemble the Cake

  • Place the first cake layer on a serving board or cake stand.
  • Spread a thin layer of whipped cream frosting.
  • Add some strawberry filling and smooth evenly.
  • Repeat with the second cake layer.
  • Place the final layer on top and frost the entire cake with whipped cream.
  • Decorate with fresh strawberries, piped swirls, or extra strawberry crumbs if desired.

Tips for the Best Strawberry Cake

  • Use fresh ripe strawberries for the best flavor.
  • Chill the cake before slicing for cleaner layers.
  • Do not overmix the batter to keep the cake soft and fluffy.
  • Cold whipping cream whips faster and holds better.

This Strawberry & Cream Cake is soft, fresh, creamy, and bursting with sweet strawberry flavor in every bite.
