Strawberry & Cream Cake
Soft strawberry cake layers filled with fresh strawberry filling and fluffy whipped cream frosting — this elegant cake is light, fruity, and perfect for birthdays, celebrations, or summer desserts.
Ingredients
For the Cake
- 3 cups flour (375 g)
- 1½ cups sugar (300 g)
- 1 cup unsalted butter (226 g), softened
- 4 large eggs
- 1 cup milk (240 ml)
- 1 cup fresh strawberry puree
- 2 tsp baking powder
- ½ tsp baking soda
- A pinch of salt
- ¼ cup vegetable oil (60 ml)
- 1 tbsp vanilla flavor
- Pink or red food colour (optional)
For the Strawberry Filling
- 1½ cups fresh strawberries, diced
- ¼ cup sugar (50 g)
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 2 tbsp water
For the Whipped Cream Frosting
- 2 cups whipping cream (480 ml), chilled
- ½ cup powdered sugar (60 g)
- 1 tsp vanilla
- 2 tbsp strawberry powder or puree (optional)
Instructions
Make the Cake
- Preheat the oven to 170°C and grease or line three 8-inch cake pans.
- Cream the softened butter and sugar together until pale, light, and fluffy.
- Add the eggs gradually, mixing well after each addition.
- Blend in the vegetable oil, vanilla, and strawberry puree until fully combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet mixture in batches, alternating with milk, mixing until smooth.
- Add food colour if desired for a richer strawberry appearance.
- Divide the batter evenly between the prepared pans.
- Bake until the cakes spring back lightly when touched and a skewer inserted in the center comes out clean.
- Allow the cakes to cool completely before assembling.
Prepare the Strawberry Filling
- Add diced strawberries, sugar, lemon juice, water, and cornstarch to a saucepan.
- Cook over low heat while stirring until thick and jam-like.
- Remove from heat and let it cool completely.
Make the Whipped Cream Frosting
- In a chilled bowl, whip the cream, powdered sugar, and vanilla until thick and stable peaks form.
- Add strawberry powder or puree if desired for extra flavor and color.
Assemble the Cake
- Place the first cake layer on a serving board or cake stand.
- Spread a thin layer of whipped cream frosting.
- Add some strawberry filling and smooth evenly.
- Repeat with the second cake layer.
- Place the final layer on top and frost the entire cake with whipped cream.
- Decorate with fresh strawberries, piped swirls, or extra strawberry crumbs if desired.
