Sandwich Lemon Cookies

Ingredients

Cookies:
• 1 cup butter (softened)
• ½ cup sugar
• 1 egg
• 1 tsp lemon zest
• 1 tsp lemon juice
• 2 cups flour
• 1 tsp baking powder

Filling:
• ½ cup butter (softened)
• 1 cup icing sugar
• 1–2 tsp lemon juice

Method
1. Cream butter and sugar, then add egg, lemon zest, and lemon juice.
2. Mix in flour and baking powder to form a dough.
3. Chill 15–20 minutes, roll, and cut into small round cookies.
4. Bake at 170°C for 10–12 minutes. Let cool.
5. Mix filling ingredients until smooth.
6. Sandwich two cookies with lemon cream in between
