Ingredients
• 200g all-purpose flour (about 1½ cups)
• 10g baking powder (2 teaspoons)
• 3 eggs
• 120g sugar (½–⅔ cup)
• 100g plain yogurt or milk
• 80g melted butter or vegetable oil
• 1 teaspoon vanilla extract
• Pinch of salt
• 150g fresh blueberries (about 1 cup)
Instructions
1. Prepare ingredients
• Wash and dry the blueberries.
• Preheat oven to 170°C (340°F).
• Grease and line a loaf pan or small square baking pan with parchment paper.
2. Make the batter
• Beat eggs and sugar together for 2–3 minutes until lighter and slightly fluffy.
• Add yogurt, melted butter/oil, and vanilla. Mix well.
• Sift in flour, baking powder, and salt.
• Fold gently until just combined (do not overmix).
3. Add blueberries
• Coat blueberries lightly with 1 tablespoon flour (helps prevent sinking).
• Fold half into the batter.
• Pour batter into the pan and place the remaining blueberries on top.
4. Bake
• Bake for 35–45 minutes until golden and a toothpick inserted in the center comes out clean.
• Allow it to cool before slicing.
Tips for a Soft, Fluffy Texture
Use room-temperature eggs and yogurt
Do not overmix after adding flour
Add a little lemon zest for a fresh blueberry flavor
Dust blueberries with flour before adding
Yield: 8–10 slices
