🍰 Boiled Fruit Cake Recipe

A rich, moist, and easy-to-make classic fruit cake—perfect for tea time or special occasions!


🧾 Ingredients

  • 2 cups mixed dried fruits (raisins, currants, sultanas, chopped dates)
  • 1 cup water
  • 1 cup sugar (brown sugar preferred)
  • 150g butter or margarine
  • 1 tsp baking soda
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp mixed spice (or cinnamon + nutmeg)
  • ½ tsp salt
  • 2 eggs
  • 1 tsp vanilla extract

👩‍🍳 Instructions

1️⃣ Boil the Fruit Mixture
In a pot, combine:
dried fruits, water, sugar, and butter.
Bring to a boil, then let it simmer for 5–10 minutes.

2️⃣ Add Baking Soda
Remove from heat and stir in the baking soda.
(It will foam slightly—this is normal!)
Let it cool for 10–15 minutes.

3️⃣ Prepare Dry Ingredients
In a separate bowl, mix together:
flour, baking powder, spice, and salt.

4️⃣ Add Eggs & Vanilla
Once the fruit mixture is warm (not hot), beat in:
eggs and vanilla extract.

5️⃣ Combine Everything
Gradually add the dry ingredients into the fruit mixture and mix well.

6️⃣ Bake

  • Pour the batter into a greased baking pan
  • Bake at 160–170°C for 45–60 minutes
  • Check with a toothpick—if it comes out clean, it’s done!

  • Let the cake cool completely before slicing
  • Store in an airtight container to keep it moist
