Ingredients

For the Cake

  • 3 eggs
  • A pinch of salt
  • 1 cup sugar
  • A little vanilla extract
  • 1 cup vegetable oil
  • 1 cup milk
  • Zest of 1 orange
  • Juice of 1 orange
  • 2½ cups all-purpose flour
  • 10 g baking powder
  • 2 tbsp shredded coconut

For the Orange Syrup

  • 4–5 tbsp orange juice
  • 4 tbsp icing sugar

How to Make the Cake

Step 1: Prepare the Batter

  1. Preheat your oven to 180°C (350°F).
  2. In a large bowl, whisk the eggs with sugar and a pinch of salt until smooth and slightly fluffy.
  3. Add vanilla extract, vegetable oil, milk, orange zest, and orange juice. Mix well.
  4. Add flour and baking powder. Stir until the batter becomes smooth and lump-free.
  5. Fold in the shredded coconut.

Step 2: Bake

  1. Pour the batter into a greased baking pan.
  2. Bake for 35–40 minutes or until golden brown.
  3. Check with a toothpick — if it comes out clean, the cake is ready.

Prepare the Orange Syrup

  1. In a small bowl, mix orange juice and icing sugar until smooth.
  2. While the cake is still slightly warm, pour or brush the syrup over the top.
  3. Let the cake absorb the syrup for extra moisture and flavor.
