🧾 Ingredients
🥣 Dry Ingredients
• 2 cups all-purpose flour (plain flour)
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp cinnamon powder
• ¼ tsp nutmeg (optional)
• A pinch of salt
🥛 Wet Ingredients
• 1 cup brown sugar (or white sugar)
• ½ cup oil (or melted butter)
• 1 cup milk (or plant milk)
• 1 tsp vanilla extract
🍓 Fruit Mix
• 1½ cups mixed dried fruits (raisins, sultanas, currants, chopped dates, cherries)
• ¼ cup orange juice (or apple juice)
• 1 tbsp flour (for coating fruits)
🌰 Optional (for extra richness)
• 2 tbsp caramel syrup or molasses
• ¼ cup chopped nuts (walnuts, almonds, cashews)
👩🍳 Preparation
1️⃣ Soak the Fruits
Mix dried fruits with orange juice
Cover and soak for 4–12 hours (overnight gives best flavor)
2️⃣ Prepare the Batter
Preheat oven to 170°C (340°F)
Grease and line your cake pan
In one bowl, mix all dry ingredients
In another bowl, whisk sugar, oil, milk, and vanilla until smooth
3️⃣ Combine Everything
Slowly add dry ingredients into wet mixture
Mix gently (don’t overmix!)
Toss soaked fruits in 1 tbsp flour
Fold them into the batter
4️⃣ Bake
Pour batter into the pan
Bake for 40–55 minutes
