🥣 Cake Batter
- 3 eggs 🥚🥚🥚
- 150g sugar
- A pinch of salt
- A dash of vanilla extract
- 120ml melted butter 🧈
- 180g Greek yogurt
- Zest of 1 lemon 🍋
- Canned pineapple 🍍
- 250g flour
- 10g baking powder
🍋 Lemon Syrup
- 4–5 tbsp lemon juice
- 4–5 tbsp powdered sugar
🥥 For Topping
- Desiccated coconut
👩🍳 Instructions
1️⃣ Prepare the Batter
In a large bowl, whisk together:
- Eggs
- Sugar
- Salt
- Vanilla extract
Mix until light and creamy.
Add:
- Melted butter
- Greek yogurt
- Lemon zest
Stir until smooth.
2️⃣ Add Dry Ingredients
Sift in:
- Flour
- Baking powder
Mix gently until the batter becomes soft and lump-free.
Fold in the canned pineapple pieces.
3️⃣ Bake
Pour the batter into a greased or lined baking pan.
Bake at 180°C (356°F) for 35–40 minutes, or until golden and fully baked.
