🍋 Grandma’s 5-Minute Lemon Cake

✨ Ingredients

🥣 Cake Batter

  • 3 eggs 🥚🥚🥚
  • 170g sugar
  • A pinch of salt
  • 80ml sunflower oil
  • 180ml milk
  • 300g flour
  • 10g baking powder
  • Juice of 1 lemon 🍋

🍯 For the Finish

  • Honey
  • 30g desiccated coconut 🥥

👩‍🍳 Instructions

1️⃣ Prepare the Batter

In a large bowl, whisk together:

  • Eggs
  • Sugar
  • Salt

Mix until light and slightly fluffy.

Add:

  • Sunflower oil
  • Milk

Mix well.


2️⃣ Add Dry Ingredients

Add:

  • Flour
  • Baking powder

Then squeeze in the fresh lemon juice 🍋

Mix everything until smooth and lump-free.


3️⃣ Prepare the Baking Pan

Use a baking tin approximately 27 × 18 cm.

Lightly grease the tin with butter so the baking paper stays in place.


4️⃣ Bake

Pour the batter into the prepared tin.

Bake at 180°C (fan oven 180°C) for 40–45 minutes, or until golden and fully baked.

✔️ A toothpick inserted in the center should come out clean.


5️⃣ Finish the Cake

While the cake is still slightly warm:

  • Drizzle lightly with honey 🍯
  • Sprinkle with desiccated coconut 🥥
