Oil-Based Vanilla Cake
Ingredients
Dry ingredients
2½ cups all-purpose flour
1 cup granulated sugar
2½ tsp baking powder
½ tsp salt
Wet ingredients
3 large eggs (room temperature)
¾ cup vegetable oil
1 cup milk (room temperature)
2 tbsp vanilla extract
Instructions
Preheat oven to 170°C / 340°F.
Grease and line two 8-inch round pans.
In a bowl, mix flour, sugar, baking powder, and salt.
In another bowl, whisk eggs, oil, milk, and vanilla until smooth.
Add wet ingredients to dry ingredients and mix until just combined.
Divide batter evenly between the two pans.
Bake for 30–35 minutes or until a toothpick comes out clean.
Let cakes cool completely before frosting.
Whipped Cream Frosting
Ingredients
2 cups cold whipping cream
½ cup powdered sugar (adjust to taste)
1 tsp vanilla extract
Instructions
Chill bowl and whisk for 10–15 minutes.
Whip cream on medium speed until slightly thick.
Add powdered sugar and vanilla.
Continue whipping until stiff peaks form (do not overwhip).
Assembling the Cake
Place one cake layer on a board.
Spread an even layer of whipped cream frosting.
Place second cake layer on top.
Frost the top and sides gently.
Chill for 30 minutes before serving for best results.
