- 4 cups all-purpose flour (500g)
- ¼ cup sugar (50g)
- 2¼ tsp instant yeast (7g)
- 1 tsp salt (5g)
- 1 cup warm milk (240ml)
- 2 large eggs
- ¼ cup butter, softened (60g)
- 1 tsp vanilla flavor
- Oil for frying
Coating
- ½ cup sugar (100g)
- Cinnamon (optional)
👩🍳 How to Make Pillow Doughnuts
Step 1: Prepare the Dough
In a large mixing bowl, combine the flour, sugar, instant yeast, and salt. Add the warm milk, eggs, vanilla flavor, and softened butter. Mix everything together until a soft dough forms.
Step 2: Knead Until Smooth
Transfer the dough onto a lightly floured surface and knead for about 10–12 minutes until smooth, elastic, and slightly stretchy. Proper kneading helps create soft and fluffy doughnuts.
Step 3: First Rise
Place the dough in a greased bowl, cover, and let it rise for about 1 hour or until doubled in size.
Step 4: Shape the Doughnuts
Roll out the dough to about ½-inch thickness. Use a doughnut cutter or round cutter to cut out the doughnuts.
Step 5: Second Rise
Arrange the cut doughnuts on a tray lined with parchment paper. Cover lightly and allow them to rise again for 20–30 minutes until puffy.
Step 6: Fry Until Golden
Heat oil over medium heat. Fry the doughnuts until golden brown on both sides, turning carefully for even cooking.
Step 7: Coat & Serve
Remove the doughnuts and place them on a paper towel to drain excess oil. While still warm, coat them in sugar or cinnamon sugar.
💡 Tips for Perfect Doughnuts
- Make sure the milk is warm, not hot, to avoid killing the yeast.
- Don’t overcrowd the pan while frying.
- Fry on medium heat for evenly cooked doughnuts.
- Coat the doughnuts while warm so the sugar sticks better.
