After several days of rain, the sun finally came out.
The morning light felt a little brighter than usual, and it seemed like the perfect day to bake a simple loaf of sandwich bread.
This bread is made with a gentle fold-and-rest method instead of kneading. Watching the dough slowly rise and transform is one of my favorite parts of bread making.
Soft, fluffy, and easy to enjoy every day, it’s the kind of bread I find myself coming back to again and again.

180 ml water (¾ cup)
3 g instant yeast (1 tsp)
30 g sugar (2½ tbsp)
8 g skim milk powder (1 tbsp)
15 g melted butter (1 tbsp)
250 g bread flour (2 cups)
4 g salt (¾ tsp)
