Instructions:

Make the dough:

In a bowl, dissolve yeast and sugar in warm water. Let sit 5–10 minutes until foamy.

Add flour, salt, and olive oil. Mix until a dough forms, then knead for 5–6 minutes until smooth and elastic.

Cover and let rise in a warm spot for about 45 minutes or until doubled.

Preheat oven:

Preheat to 400°F (200°C). Line a baking sheet with parchment paper.

Shape the knots:

Roll out the dough into a rectangle (about ¼ inch thick).

Sprinkle cheese (and optional herbs or extras) evenly over the dough.

Fold dough over the cheese (like a sandwich), gently press, then cut into 1-inch wide strips.

Twist and tie each strip into a knot, tucking the ends underneath.

Place knots on the baking sheet. Bake for 12–15 minutes or until golden brown and puffed.

Brush with garlic butter:
