🍯 Honey Ginger Bread Cake 🍯

Soft, warmly spiced, and naturally sweetened with honey—this comforting cake is perfect for cozy evenings and tea time!


🧾 Ingredients

  • 2 cups (250 g) all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (113 g) unsalted butter, softened
  • ¾ cup (255 g) honey
  • ½ cup (100 g) brown sugar
  • 2 large eggs
  • ½ cup (120 ml) milk
  • 1 tsp vanilla extract
  • 1 tbsp fresh ginger, grated (optional)

👩‍🍳 Instructions

  1. Preheat oven to 170°C (340°F). Grease and line an 8-inch cake pan.
  2. Mix flour, ginger, cinnamon, nutmeg, baking powder, baking soda, and salt. Set aside.
  3. Cream butter and brown sugar until light and fluffy.
  4. Add honey and mix well. Beat in eggs one at a time. Stir in vanilla and fresh ginger (if using).
  5. Combine dry ingredients with milk in batches. Mix gently until smooth.
  6. Pour batter into the pan and level the top.
  7. Bake for 40–45 minutes, or until a skewer inserted comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Tip: This cake tastes even better the next day as the flavors deepen beautifully!
