Ingredients

For the Chocolate Coffee Cake

  • 1 cup (120g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (50g) unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 large egg
  • ½ cup (120ml) whole milk
  • ¼ cup (60ml) vegetable oil
  • ½ cup (120ml) strong brewed coffee (cooled)
  • 1 tsp vanilla extract

For the Mocha Frosting

  • 1 cup (226g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • 2 tbsp (30ml) strong brewed coffee (cooled)
  • 2 tbsp (15g) cocoa powder
  • 1 tsp vanilla extract
  • 2–3 tbsp (30–45ml) milk (as needed)

For Garnish

  • ¼ cup (40g) chocolate chips or chocolate shavings

Instructions

  1. Preheat Oven
    Preheat your oven to 180°C (350°F) and grease two or three round cake pans.
  2. Prepare the Batter
    In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    Add the egg, milk, oil, brewed coffee, and vanilla extract. Mix until smooth and slightly runny.
  3. Bake the Cake Layers
    Divide the batter evenly between pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
    Allow the cakes to cool completely before assembling.
  4. Make the Mocha Frosting
    Beat the softened butter until light and creamy. Gradually add powdered sugar and mix well.
    Add cocoa powder, brewed coffee, and vanilla extract. Beat until smooth.
    Adjust consistency with milk until soft and spreadable.
  5. Assemble the Cake
    Place one cake layer on a serving plate and spread mocha frosting evenly on top.
    Repeat with remaining layers, then frost the top and sides of the cake.
  6. Decorate & Serve
