Ingredients

  • 250g all-purpose flour
  • 150g granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs, room temperature
  • 120ml vegetable oil (or melted butter)
  • 180ml whole milk
  • 1 tablespoon vanilla extract
  • 200g chocolate chips

Instructions

  1. Preheat oven:
    Preheat your oven to 180°C (350°F) and line a muffin tray with paper liners.
  2. Mix dry ingredients:
    In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. Prepare wet ingredients:
    In another bowl, whisk together eggs, oil, milk, and vanilla extract until smooth.
  4. Combine batter:
    Pour the wet ingredients into the dry ingredients and gently mix until just combined. Avoid overmixing; a slightly lumpy batter gives soft, tender muffins.
  5. Add chocolate chips:
    Fold in most of the chocolate chips, reserving some for topping.
  6. Fill muffin cups:
    Divide the batter evenly into liners, filling almost to the top for that bakery-style rise.
  7. Top and bake:
    Sprinkle remaining chocolate chips on top and bake for 18–22 minutes, or until golden and a toothpick inserted comes out clean.
  8. Cool and serve:
