🍪 Custard Cream Sandwich Cookies ✨

Delicate buttery cookies filled with smooth vanilla custard cream — melt-in-your-mouth treats perfect for tea time or gifting! 💛☕


📝 Ingredients

🍪 For the Cookies

  • 200g all-purpose flour
  • 50g custard powder (like Bird’s custard powder)
  • 100g unsalted butter, softened
  • 80g powdered sugar
  • 1 tsp vanilla extract
  • 2–3 tbsp milk

✨ For the Filling

  • 100g unsalted butter, softened
  • 150g powdered sugar
  • 1–2 tbsp custard powder
  • 1 tsp vanilla extract

👩‍🍳 Instructions

1️⃣ Make the Dough

Cream together the butter and powdered sugar until light and fluffy.

Add vanilla extract and mix well.

Sift in:

  • all-purpose flour
  • custard powder

Mix until a soft dough forms.

Add milk little by little if needed to bring the dough together.


2️⃣ Shape the Cookies

Roll out the dough to about 5mm thickness.

Cut into:

  • rectangles
  • circles
  • or classic oval custard cream shapes ✨

Place cookies onto a lined baking tray.


3️⃣ Bake

Bake in a preheated oven at 170°C (340°F) for 12–15 minutes.

The cookies should remain pale with lightly golden edges.

Allow them to cool completely before filling.


4️⃣ Make the Filling

Beat butter until creamy and smooth.

Add:

  • powdered sugar
  • custard powder
  • vanilla extract

Beat until fluffy and silky.


5️⃣ Assemble

Spread or pipe the custard filling onto one cookie.

Top with another cookie to create a sandwich.

Gently press together.
