🧁 Ingredients
• 2 cups (250g) all-purpose flour
• 2 tsp baking powder
• ¼ tsp salt
• ¾ cup (170g) unsalted butter, softened
• ¾ cup (150g) granulated sugar
• 3 large eggs
• 2 tsp vanilla extract
• ½ cup (120ml) milk or orange juice
• 1½ cups (225g) mixed dried fruits
(raisins, cherries, mixed peel & apricot)
• ½ cup (75g) tutti frutti
(optional but highly recommended)

👩🍳 Instructions
1️⃣ Preheat oven to 170°C / 340°F.
Grease and line a loaf pan with parchment paper.
2️⃣ Sift together flour, baking powder, and salt. Set aside.
3️⃣ In a mixing bowl, cream butter and sugar until pale and fluffy.
4️⃣ Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
5️⃣ Add the flour mixture in batches, alternating with milk or orange juice. Mix gently until just combined.
6️⃣ Toss the dried fruits and tutti frutti with a tablespoon of flour, then fold into the batter evenly.
7️⃣ Pour batter into the prepared pan and smooth the top. Add extra fruits on top if desired for a beautiful finish ✨
8️⃣ Bake for 50–60 minutes or until golden brown and a skewer inserted in the center comes out clean.
9️⃣ Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
