Old-Fashioned Gingerbread Loaf

🧾 Ingredients
🌾 Dry Ingredients
- 250 g all-purpose flour
- 1½ tsp ground ginger
- 1 tsp ground cinnamon
- ¼ tsp nutmeg (optional)
- ½ tsp ground cloves (optional, but traditional)
- 1 tsp baking soda
- ¼ tsp salt
🧈 Wet Ingredients
- 120 g unsalted butter
- 150 g brown sugar
- 170 g molasses (or dark honey as a substitute)
- 2 eggs, room temperature
- 180 ml milk or buttermilk
- 1 tsp vanilla extract
👩🍳 Instructions
1️⃣ Prepare the Oven & Pan
Preheat your oven to 170°C (340°F).
Grease and line a loaf pan with parchment paper.
2️⃣ Cream Butter & Sugar
In a large bowl, beat the butter and brown sugar until light, smooth, and creamy.
3️⃣ Add Molasses & Eggs
Mix in the molasses until fully combined.
Add the eggs one at a time, beating well after each addition.
4️⃣ Mix the Dry Ingredients
In a separate bowl, whisk together:
- flour
- ginger
- cinnamon
- nutmeg
- cloves
- baking soda
- salt
5️⃣ Combine the Batter
Gradually add the dry ingredients to the wet mixture, alternating with the milk or buttermilk.
Mix gently until just smooth.
Stir in the vanilla extract.
6️⃣ Bake
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
7️⃣ Cool & Serve
Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
