  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) brown sugar
  • 1 cup (250g) mixed dried fruits (raisins, cherries, sultanas, candied peel, etc.)
  • 1 tsp baking powder
  • ยฝ tsp baking soda
  • 1 tsp mixed spice or cinnamon powder
  • ยฝ cup (120ml) vegetable oil or melted butter
  • 3 large eggs
  • ยฝ cup (120ml) milk or orange juice
  • 1 tsp vanilla extract
  • 1 tbsp honey or molasses (optional, for extra richness)
  • A pinch of salt

Preheat your oven to 170ยฐC (340ยฐF).
Grease and line a loaf pan with parchment paper.

In a bowl, combine:

โœ” Baking soda
โœ” Salt
โœ” Mixed spice/cinnamon

Set aside.

In a large bowl, whisk together:
