🧾 Ingredients
🥣 Cake Batter:
- 3 eggs 🥚
- A pinch of salt
- 1 tsp vanilla sugar or vanilla extract
- ¾ cup sugar (150g)
- ½ cup sunflower oil (120ml)
- ¾ cup yogurt (180g)
- Zest of 1 orange 🍊
- Juice of 1 orange
- 2 cups flour (270g)
- 1 tbsp baking powder (12g)

- Dried apricots
- Dried cranberries
- Chopped walnuts
🍥 Topping (Optional Glaze):
- 4 heaped tbsp powdered sugar (80g)
- 1–2 tbsp Greek yogurt
👩🍳 Instructions
1️⃣ Whip the Base
- Beat eggs, salt, vanilla, and sugar for 2–3 minutes
- Mixture should be light, creamy, and fluffy
2️⃣ Add Wet Ingredients
- Mix in sunflower oil and yogurt
- Add orange zest and juice
3️⃣ Add Dry Ingredients
- Add flour in two stages
- Mix in baking powder
- Stir until smooth (don’t overmix)
4️⃣ Add Fruits & Nuts
- Fold in dried apricots, cranberries, and walnuts
5️⃣ Prepare Pan
- Use a 22 cm (8–9 inch) springform pan
- Grease with butter and line with baking paper
6️⃣ Bake
- Bake at 180°C (356°F) for 40–45 minutes
- Toothpick should come out clean
7️⃣ Optional Glaze
- Mix powdered sugar with Greek yogurt
