Ingredients
- 2 cups (250g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup (113g) unsalted butter, softened
- ¾ cup (150g) sugar
- 2 large eggs, room temperature
- ½ cup (120ml) fresh orange juice
- 1 tbsp orange zest
- ½ cup (120ml) milk
- 1 tsp vanilla extract
Optional Orange Glaze
- 1 cup (120g) powdered sugar
- 2–3 tbsp fresh orange juice
Instructions
Preheat the oven to 170°C. Grease and line a loaf pan with parchment paper.
In a bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
Stir in the orange zest and vanilla extract.
Add the dry ingredients gradually, alternating with the milk and orange juice. Begin and end with the dry ingredients. Mix gently until just combined — avoid overmixing.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
For the glaze, mix the powdered sugar with fresh orange juice until smooth, then drizzle over the cooled cake.
Tips
- Use fresh orange juice and zest for the best flavor.
- Don’t overmix the batter or the cake may turn dense.
- The cake stays soft for several days when stored in an airtight container.
